Nutrition Is My Life
My passion for nutrition was ignited by a desire to mend my troubled relationship with my body. Growing up, I was always thin. No matter how much I ate, I could never gain weight. As a result, I was bullied during my childhood and earned the nickname "Skeletor." It wasn't until my move to the United States and the increased access to fast food and processed food that I began to put on pounds. Initially, I was overjoyed by this transformation. My arms and legs filled out, looking soft rather than sinewy, and the tightness that once defined my face eased, giving it a fuller, more natural appearance. However, over time the cultural glorification of thinness, coupled with peer pressure, led me to come to resent my newfound body.
Fast-forward to college, where my relationship with food took a darker turn. I went from being an underweight adolescent to developing an eating disorder. The campus environment, rife with societal pressures and unrealistic beauty standards, became a breeding ground for unhealthy habits. Surrounded by girls who were perpetually dieting and obsessing over their bodies, I adopted harmful habits such as extreme calorie restriction, meticulously counting every morsel that passed my lips. This self-imposed starvation would inevitably lead to intense, uncontrollable binges, followed by guilt-ridden purging sessions. It was a vicious loop: I'd starve myself until the gnawing hunger became unbearable, only to succumb to the binge-purge cycle again and again.
The dark days only grew darker, burdened by secrecy and shame that felt like a tightening noose around my neck. Though it seemed all-consuming, I still had enough clarity to recognize I was nearing a point of no return. Before it was too late, I reached out to my loved ones. With their unwavering support and the help of caring professionals, I not only stepped back from the edge but began a powerful journey of healing and rediscovery.
Little did I know that my eating disorder would wind up serving as a catalyst for my future. Awful as it was, this experience taught me the critical importance of nutrition in maintaining health and wellness, sparking an insatiable curiosity to learn more about this field. As I delved deeper into the realm of healthy nutrition, seeking a sustainable path to recovery, a plant-based dietary approach resonated with me. This approach not only appealed to my conscience due to its positive impact on the environment and other life-forms but also offered numerous benefits spanning weight management to overall health.
However, when I sought guidance from healthcare professionals about pursuing a plant-based diet, I was met with disappointment. Neither my primary care physician nor the registered dietitian I consulted had much to offer, and their limited knowledge of plant-based nutrition made me question their overall expertise. At the time, veganism was not as mainstream as it is today, and the scarcity of information regarding a vegan diet likely contributed to their lack of support, as many healthcare professionals were unfamiliar with the concept. Nonetheless, this setback only strengthened my resolve to educate myself and master the subject independently. It became clear that if I wanted to fully understand and benefit from a plant-based lifestyle, I would need to become my own advocate and expert.
Committed to prioritizing my health, transitioning from an omnivorous to a vegan diet was a gradual process. In a slow yet steady progression, I first eliminated animal meat, followed by eggs and dairy. This shift proved challenging, as finding vegan options was not commonplace at the time. Reading every ingredient on each food item became routine for me, making shopping and dining out more laborious. However, with practice, identifying vegan foods became second nature, much like learning to ride a bike. Over time, I developed a mental catalog of vegan-friendly products and restaurants, transforming what was once a daunting task into an exciting and enjoyable culinary adventure.
Navigating this journey alone was another blessing in disguise, as it ignited a passion to pursue formal education in nutrition. Around that time, I stumbled upon an article discussing the lack of nutrition education in medical schools. Medical students were typically offered nutrition classes only as electives, leaving them ill-equipped to advise patients on healthy eating habits despite being on the front lines of healthcare.
Reading this article confirmed my experiences with healthcare professionals and solidified my dream to turn my newfound passion for nutrition into a career. This decision felt like a natural extension of my personal journey and an opportunity to address the knowledge gap I had encountered.
With a solid foundation in science-I had already earned a bachelor's degree in biology with a focus on microbiology-the only question was which graduate program would help me achieve my ultimate goal: training the next generation of medical doctors on the importance of healthy eating habits, focusing on plant-based diets. I chose to pursue a PhD in nutrition biology, a field that explores how nutrients and other food components impact our bodies at the molecular, cellular, and systemic levels, in one of the most comprehensive nutrition programs in the country. Given my strong interest in plant-based diets, my research focused on the effects of plant foods and their isolated compounds on cardiovascular health, with a specific emphasis on immune function. It also extended to clinical work, which I found incredibly fulfilling. Engaging directly with human participants allowed me to learn about their dietary struggles, confusion, and frustrations as they related to nutrition information, while also giving me the chance to educate them. This mutual learning process was especially rewarding.
Ultimately, this experience became the catalyst for changing my initial plans. I shifted from an indirect approach-educating healthcare professionals-to a more direct path of reaching individuals. Though my direction has evolved, my commitment to sharing knowledge about nutrition has remained steadfast. These experiences have led me to where I am today, writing this book to reach a wider audience and empower others with the information I wish I had earlier in my journey.

As a trained scientist in nutrition, biology, and critical thinking, I'm committed to providing only the most relevant information, carefully curated to avoid common pitfalls like biases stemming from funding sources, flawed study design, or questionable statistical methodologies. My goal is to empower readers with a deep understanding of healthy living, free from unnecessary complications and distractions.
While the core of this book is rooted in nutrition science, it's not a scientific manuscript. This gives me the freedom to weave in my authentic voice. The conversational style also helps break down complex scientific concepts, making them accessible to those without a deep scientific background. Additionally, as this book reflects my personal take on healthy nutrition, you'll find me unafraid to question and critique the conventional and often self-serving aspects of scientific research.
While I'm a scientist by training, my personal journey with dietary challenges has given me a unique and nuanced perspective on healthy nutrition. These experiences have taught me that there are multiple layers of truth and that science alone is not enough to fully understand the complexities of human health.
As a result, I subscribe to what I call "the triad of truth"-a harmonious blend of science, logic, and experience. While data-driven insights are highly valued-and rightly so, given the foundation of centuries of scientific inquiry and the meticulous planning that goes into designing studies-I firmly believe that logic and personal experience also hold immense value. By considering multiple perspectives, we can gain a more comprehensive understanding of the world and our place within it.
I've therefore adopted a philosophical approach that considers multiple sources of evidence. While a single source of evidence may suggest a possibility, two are stronger and imply probability, and three point to a near certainty. This framework helps me weigh the merits of diverse perspectives and arrive at a more informed understanding. For instance, scientific findings might suggest that dairy is healthy. However, if I'm lactose intolerant, logic dictates that dairy is unsuitable for someone who can't digest it, while personal experience confirms that dairy triggers unpleasant symptoms in me. The mismatch between these perspectives and the scientific consensus highlights the limitations of relying solely on one source of evidence for the truth. As a result, what you'll find within these pages is a blend of formal scientific knowledge, personal insights, and intuitive wisdom.
