The technique of electrophoresis is used widely by chemists and biochemists. It has particular importance in the study of environomental health, technology, food analysis, pollution control, water analysis and forensic analysis. Electrophoresis is a technique based, in part, on chromatographic principles. Electrophoresis, like chromatography, is concerned with the separation of the components of samples. In fact, electrophoresis and chromatography are sometimes used in combination with each other to achieve high resolution in the separation of molecules, for example amino acids and peptides derived from the hydrolysis of proteins.
