Game meat currently represents less than 1% of the world's meat supply, yet in the Southern Hemisphere, the commercial deer farming industry has become firmly established and New Zealand alone is expected to supply well over 25,000 tonnes by 1995. There is no question that deer farming is here to stay, or that it will expand to other areas. This book addresses the biotechnical aspects of game production, to the exclusion of managing game farms as a business. Although the focus is on the waipiti (elk), Haigh makes extensive reference to studies of European red deer, two variants of the circumpolar species Cervus elaphus. The agricultural uses of these species is covered, rather than their management for recreational hunting.
