Although crayfish have been farmed in the United States for many years, attempts to farm them for human consumption in Europe have so far proved to be uneconomic. In this text the author has provided basic biological information and practical guidance, in non-scientific terms: he also outlines theories which, if successfully tested, could lead to profitable crayfish farming in Europe.
