Bovine Meat Carcases and Cuts 2004

This is the second edition of the UNECE internationally agreed standard for raw beef carcases and cuts marketed for human consumption, developed by the Working Party of Agricultural Quality Standards. The publication is part of a series of UNECE standards for meat products designed to facilitate fair international trade, promote high quality, sustainable production and to create market transparency for buyers and consumers. The standard includes chapters on purchaser specified requirements, including refrigeration, production history, fat limitations, marbling, meat colour and weight ranging, packing, storage, transport and labelling; the UNECE code for purchaser requirements for beef; carcases and cuts descriptions.
