A former chef turned writer, has produced this collection of recipes for fish caught in British coastal waters. Sections are devoted to fish and shellfish that he particularly likes - scallops, spidercrabs, monkfish, skate and John Dory or to dishes such as pies, salads, soups, terrines and mousses. Michael Raffael also makes use of seabeet samphire and other coastal plants and believes that nothing beats fresh food simply prepared and his dishes all reflect that belief.
