A collection of traditional British recipes that can be used at Christmas and all round the year. The book examines how the progress that has ended our dependence on home-grown seasonal produce has resulted in many recipes being neglected or forgotten. Some dishes served at domestic and communal celebrations, however, have survived sporadically around the country and have been re-discovered in research for this book. Various regions of Britain have contributed to the collection, and the recipes include Dorset jugged steak, Gloucester rarebit, Essex gingerbread, Yorkshire cheesecake, Westmorland parkin, Forfar bridies and Welsh cawl. There are also recipes for sauces and stuffings, fritters and dumplings, tarts and puddings, buns and cakes, icing and marzipan, brandy snaps and toffee apples.
