Peggy Stanfield, MS, RD, LD, CNS is a Registered Dietician and Professor Emeritus from College of Southern Idaho, Twin Falls. She is a Certified Nutrition Specialist, a professional member of the Institute of Food Technology (ITF), and has recently completed a second term as president of Text and Academic Authors (TAA), an organization devoted to advancing quality education materials for students and advocating for author's rights. Following her retirement from CSI she taught at the University of Hawaii, Manoa, Honolulu.While at CSI she helped develop and implement the nutrition component of the nursing curriculum, taught nutrition theory, and supervised nursing students during their clinical experience in teaching diet therapy to selected patients. She transferred from the Nursing Department into the Allied Health division, and while continuing to teach nursing students, also taught students with majors in other health divisions.Peggy Stanfield is also the author of Introduction to the Health Professions, Essential Medical Terminology and Mastering the New Medical Terminology Through Self-Instructional Modules, all published by Jones and Bartlett Publishers. Y. H. Hui, PhD received his doctoral degree in nutrition biochemistry from the University of California at Berkeley in 1970. He taught nutrition and food science at Humboldt State University from 1971 to 1987. Since 1987 he has devoted his time to writing, also serving as a publishing consultant. From 1992-1995, he was appointed Editor-in-Chief for the United States Association for Food and Drug Officials.Dr. Hui has authored or edited more than 20 books in nutrition, food science, health sciences, medicine, and law. Nanna Cross, PhD has worked as a faculty member in dietetic and physician education programs teaching clinical nutrition courses and supervising dietetic interns in clinical practicums. Dr. Cross worked as a clinical dietitian at the University of Missouri Hospitals and Clinics and as a consulting dietitian for Home Care, Hospice, Head Start and Long-Term Care facilities.
