Description
Among the vegetables, cauliflower (Brassica oleracea L var. botrytis) is an important member of Crucifer and has probably been rightly described as an aristocrat of Cole crops. The name cauliflower consists of two Latin words namely 'caulis' means cabbage and 'floris' means flower. Cauliflower has high protein and peculiar instability of vitamin C after cooking. It is rich in minerals such as potassium, sodium, iron, phosphorus, calcium, magnesium etc. It also contains vitamin A.
