Recent Advances of Research in Antinutritional Factors in Legume Seeds and Rapeseeds

The proceedings of the 3rd International Workshop on Recent Advances of Research in Antinutritional Factors in Legume Seeds and Rapeseeds. They focus on various aspects related to the presence, effects and inactivation of antinutritional factors (ANF) in peas, beans, lentils, chick peas, lupines, soya and in rapeseed. These constituents of seeds play an important role in the plant's protection against predation, infection and resistance to disease. Special attention is given to the analytical methods for ANF determination, to their in vivo mode of actions and their effects in different animal species and in human nutrition, and also to the possibilities of reducing the compounds in the seeds by breeding, by processing and by biotechnology in particular.
