Las Vegas, Nevada. Dubbed the "Rock n' Roll Chef" by Rolling Stone

executive chef and proprietor at his namesake restaurant "Simon" at
Palms Place in Las Vegas. His other restaurants include Simon LA, in Los

Las Vegas.
