Description
The aim of this book is to provide nurses with a background from which they may begin to take their place in the nutritional care team. In the book, the principles of nutrition are discussed and the text considers the nutrients, their properties and their metabolism. Also discussed are the components of foods in order to show the sources of nutrients and the basis of planning a healthy diet and meeting nutritional needs through the different stages of the lifespan. Diet and disease are assessed with regard to both the aetiology and the treatment of disease with the emphasis being placed on those conditions in which changes in nutritional status are common or for which dietary modification may be required.
